Raw Garlic has been known to prevent blood clots and keeping the blood pressure down. However, most recipes require the garlic to be cooked and then used for an enhanced flavor. Recently, scientists had decided to look into the health benefits of both raw as well as cooked garlic. They went on to heat the herb in different ways and came to the conclusion that when garlic is baked or boiled for up to three minutes, it is just as healthy as the raw one.
Crushed Garlic has proved to be even healthier, as it retains some of the benefits when cooked up to six minutes. Crushing leads to the release of more healthy thiosulfinates. Microwaving Garlic has been proved to be purely bad. Upon a few minutes of microwaving Garlic, the anti clotting effects were shown to be neutralized. Lightly sautéed garlic also maintains its heart healthy benefits.
So, the next time you are making a garlicky dish, make sure that you add the garlic near the end of the cooking, and crush it in order to retain the taste and the benefit of the herb.
